Introduction/Course Description:

Creating a culinary career takes time and effort. That does not mean that there are no guideposts or helping hands along the way. This course offers you the framework you need to dream big dreams, inspires passion, and encourages you to be your best and to be strong in a profession that is ever so rewarding. Throughout this course, we will explore a variety of career paths and employment opportunities. We will also provide a detailed roadmap to setting career goals, analyze the key concepts of self-promotion, provide examples for creating the perfect resume and explore successful strategies for interviewing for your dream job.


Course Objectives/Program Outline

Module One - The Culinary Industry

Learning Objectives:

  • Describe the "typical" job in the culinary field.
  • List the character traits of a successful individual in the culinary profession.
  • Discover a wide variety of positions for employment in the foodservice kitchen.
  • Recognize additional options for employment that include more direct contact with guests.
  • Become familiar with employment opportunities in foodservice research and development.
  • Explore careers that involve working directly with food but not actually preparing foods.

Module Two - Career Goal-Setting

Learning Objectives:

  • Explore the concept of effective goal setting.
  • Create a "career filing cabinet" to store specific details involved in creating your career.
  • Define the importance of short, immediate and long term goals.
  • Generate a list of dream jobs and determine the motivations behind the jobs on your list.
  • Construct steps to achieving specific intermediate and short term goals.
  • Become familiar with transforming your steps into a systematic approach called S.M.A.R.T. goals.

Module Three - Self-Promotion

Learning Objectives:

  • Explore the importance of a cover letter and its ability to provide a reason to look at your resume.

Module Four - Landing a Job

Final Learning Statement

Learning statements should be in a narrative format – as opposed to an outline format. Depending on individual writing styles Learning statements should be 1-2 pages. The learning statement can vary according to individual style. Your learning statement should answer the broad question of "what did you learn?". To help get you thinking, here are some suggested questions:

  • What are the major concepts of the course that you have learned?
  • What new professional language have you acquired relating to the topic?
  • Thinking back to your project reflections, were you surprised at the outcomes?
  • What new resources did you find in the study of the content?
  • As an aspiring chef/food service professional, what new concepts will you now integrate into your career search?
  • Are there any ideas that presented themselves as enlightening and useful?

Requirements for Course Certificate of Completion

The following are the general course requirements for issuing a certificate of completion for this course:

  • Student must receive 80% or better on each module quiz as well as the final exam
  • Student must complete all course projects as outlined within the course
  • Student must complete a Final Learning Statement at the end of this course
